This one won't keep well in the fridge. The shrimp cooks quickly and is best done just before serving. You can prepare the grits ahead and reheat slowly, stirring with some additional chicken stock or cream to keep it smooth and creamy.

I would love to make some ahead of time to give away but was wondering how long it will keep in the fridge in a sealed container. I know you have to be careful when dealing with seafood.
