I have two questions. on wikipedia it says that the proteins the egg has is 97% or so, easier to digest when its cooked but when uncooked it is about 55% or something is that true?. and my second question is, is it best too eat free range eggs, or is it just for the chickens benefit. thanks
I haven't seen those bioavailability numbers numbers before but it could make sense. When you cook eggs you unfold the proteins and likely make them more accessible to digestive enzymes. That being said I'd still be hesitant to trust those numbers as the gap is pretty significant, although possible. As for the free range, I think it's more of an ethical thing and any difference in the nutrition from the eggs would be insignificant. Doesn't hurt to go free range though. Cheers

Where as in actuality most "free range" chicken simply live in one big cage instead of a bunch of small ones and they're packed in so tightly it's no better for them than being in individual cages. If you want better eggs go to a farmer's market, and in case you're wondering the eggs do taste better.

i appreciate your concern but you are trying to explain a biological process to a biochemist - a valiant effort but not exactly true. avidin does of course bind biotin - that's why we use it so often in molecular biology; however, if you are suggesting that eating raw eggs renders a person biotin deprived due to (residual avidin in the intestines? i've never understood the tale to be honest) you are wrong. with a pI of 10.5 this protein is getting denatured in the stomach and diced up by pepsin
the only technique is to avoid breaking the yokes and to use a chaser before and after drinking them - it really helps when you are first starting out. i have ~5/day over the last couple yrs now, good stuff. enjoy

Other than that 55% OF RAW EGG PROTEIN IS INDIGESTIBLE, while cooked egg's proteine is 91% digestible.
