It's interesting Alton should mention garum because the Ancient Roman fish sauce is more or less "extinct" since no recipes exist (and even with a list of ingredients, there are no known proportions listed of said ingredients). Worcestershire sauce can simply be considered a modern interpretation of garum.
I wonder if Alton plans on doing an episode on garum and other fish sauces?
i use partial brine and than a seasoning maid of 6 spices and seasonings u cant beat my meat
