Workshop Design On Backward Design

I really don't understand how to differentiate instruction. Dr Sookdeo says to give a choice on the assessment, to modify it, but that's not differentiating INSTRUCTION that's differentiating the assessment. I'm confused. My question is when giving students new information how do you differentiate that? In other words: how do you differentiate instruction?
