We use pre mixes sometimes (the ones we recommend on the web page) and most of the time I just use a variance of a recipe from one of the sausage books that we recommend on the sausage and jerky page on our site. I just always think I can improve on something else.

Very nice! You show how easy it is to make sausage at home. I used my electric grinder by myself and lacked some quality control. Better with help. I like the idea of stuffing the whole casing before twisting. That was a good tip.
excellent you are using gloves all the time thats important. If you are going to do a fermented product that have starter bacterias you dont want other bacteriacontaminating your stuff. Was this sausage fermented? you added starter bacteria to lower the pH or not?
Plastic may be the ONLY kind of horn or tube that you can find for the SIZE casings you are using. Stainless is always better if you can find it, but also the most expensive.
DO NOT soak the collagen casings, just the sheep or hog casings. The large brown casings for summer sausage will also need to be soaked. Follow manufacturers instructions. Thanks for watching.
What size horn would you like? I use up to and including a 40 mm one for back bacon (Canadian Bacon) A note with sheep casing. Do not use hot water on it sc is very delicate to begin with. Using hot water will ruin it. I didn't bring up collagen or fibrous casings because you were not using either in this video, but yes don't get collagen casings wet and with fibrous you can soak them but most of the time it is only for a minute or so. The large brown casing I assume is smoked casing?

2 You should wash the casing in warm water and let it soak in fresh warm water over night.
3 Put a little bit of water in the casing before you put it on the horn. The amount varies on the length of the casing. To do that open the end, place to fingers in and pump the water in by running the open end through the water.

No fermentation. Since we smoke a lot of our sausage, it does have cure added to be safe.

The casings in the video are intestine casings. You can get and use the collegen ones if you want, just do not soak collegen, put them on dry.
