i've been coaching culinary students for contests but i'm sorry your presentation doesn't look professional at all..... portion sizes are too big... plating style is not so presentable and lacks coordination... well that's in 2007 maybe u have improved now.
good techniques but little personal creative application. like he did this in culinary school. Bet he kicks my ass in techniques though. dessert is just ugly. but proly delicious.
