I hope you don't mind, but I've always wondered how do you cut out certain bits of a shot, like people, is it a kind of cookie cutter?

masking until your brain explodes; I wish there was an easier way.

However, if they have a single-color screen behind them, you can use a type of chroma keyer that subtracts that color from the image or clip (though it will take off on the picture/person as well, if there's a lot of that color in the subject your wanting to keep.

Best thing to do is mask though (takes a long time) Hope that helped.
