Ok so glad someone pointed out about the amount of baking powder!
Just one thing... I usually only use 1 egg in normal muffins, and about 80g of butter. However,
we all know that egg yolk has a very high content of the bad cholestorol that furs up our arteries. I think that 4 eggs is a huge amount of choloestorol, therefore, not really healthy! In normal muffins, you can use wholemeal organic flour and less sugar. It is not true that fructose, or fruit sugar, is in fact healthier.
Hi Kieran, great recipe thanks. I am just a bit confused is it 1 teaspoon or 1 tablespoon of baking powder?? On your site is says teaspoon but in the video you say tablespoon?
I made one batch with the rolled oats but ran out for my second batch and had only quick oats left. I added a bit of sr wholemeal flour and some oat bran. they rose up beautifully.
@leontine78 Glad you liked it :) I'm not a stickler for measurements (as you probably saw in the video!) but go with 1 teaspoon.
I've used rolled oats, quick cooks oats and oatmeal before and they all work well (without flour) but I just like the texture of the rolled oat muffins so much more :)
OMG thanks for making this im in love with muffins and i wanted to make some healthy ones enstead of eating mcdonalds ones i know they are fatty but I LOVE MUFFINS!
@fishfoodme , hey, it's about 1/4 of a cup, but if you like it healthier (cocnut is quite high in fat) then use cocnut essence, or try some other flvaours like apple sultana, pear and date, coffe wlanut, orand almond etc :)
@EveryNina i don't think they will be moisty enoiugh or stick together if you don't add the apple sauce. but experiment away and let me know if it works! :)
