The "Fire ritual" is not in any way traditional. It was created in the nineties by Czech fauxsinthe makers for two reasons:
1) By fabricating a bizarre ritual and playing up the mystique, it makes tourists want to buy it.
2) Most Czech fauxsinths taste absolutely terrible. By burning the sugar, it masks the foul flavor of the drink.
Should the sugar not burn? Nevertheless, the traditional method differently functions. One takes a sugar cube and places him on a spoon. Then one pours the absinthe about the sugar. Afterwards one lights the sugar so that he caramelises. To good one last one wipes off the absinthe with ice-cold water.
French Absinthe is green since they use many herbs for coloring. Swiss absinthe however is clear since they use the herbs in the distillation process. The best absinthe in the world is clear and hails from Switzerland.

Buying a metal funnel called a brouille will save you a hell of a lot of hassle preparing it, especially as a bartender. I bought glass ones from alandia, but they broke too easily. The metal one will last me forever, and there's no reason not to try it.

I reccomend you to buy a good Duplais Blanche or Verte they arent to expensive (29-32€) this way you get a decent understanding of what absinthe really is. It isnt some bitter green brew from hell like a lot of people think. Its a drink apreciated by a lot of people but it was misunderstood by narrowminded people a long time ago who thought it caused hallucinations. But nowadays it seems that there are still people foolish enough to believe its a sort of drugs.
absinthe was alot more bitter back then, because the balance between the herbs, espescially wormwood wasn't too good. It is not recommended to use sugar nowadays, if you have a good absinthe at least.

Kubler and Lucid, now legal and available in the US, both contain plenty of thujone which was supposedly what made you hallucinate. In reality its not a hallucination, but rather a different type of buzz- I cant explain it more, just try it.

There is as many correct way's to drink something as there is drinkers. Though I think this is silly way to drink absinthe.
Good absinthe does not need anything.
Though next recipe is good
4 cl absinthe
8 cl apple syrup
8 cl vanilla yoghurt
about 5 leaves (gloves?) of basil
mix all in blender
Can change yoghurt to vanilla soft ice cream
