It's the apps that are probably causing this. I dont own a touch, but if there was a way to disable the jailbreak then you could see if it's the apps or the iPod itself.
I ended up installing a brand new keyboard and that fixed it. I then upgraded to the 2.0 anyways, so it has been fixed. Also, there is no way to temporarily "disable" the jailbreak.
