Cornbread is the ultimate treat. There is nothing better than cornbread in this world. Being from the south, I know my cornbread. I wish I was there to eat that cornbread, but nothing would be left of it.
I had to go out and buy a bigger cast iron skillet to make this. I ended up getting an Emeril one that was 12 1/2" in diameter. This was the perfect size to make your cornbread..all the ingredients fit very nicely. I knew better than to make it in my 9" cast iron skillet. This was super delicious!!!!!!!!!!!!!!!!!!!!!

Thanks for your nice comment! I just put the skillet (or pan) on the center rack. I move the other oven rack to the top position in the oven. Then I just place a large piece of aluminum foil flat on the top rack. That protects things like cakes, pies, and casseroles that are baking below. You can remove it easily at any time during the baking process!

If you can't find the self-rising cornmeal mix that I used, you can use half cornmeal, half flour, and for each cup of this mixture, add 1/2 teaspoon salt and 1 1/2 teaspoon baking powder. If you use flour alone, you might still like the casserole, but it will be more like a large biscuit with the other ingredients baked in it.
I haven't made your exact recipe here, but I've been making a variation of thi for years, and it is WONDERFUL !!!! Although it is a meal in itself, it is especially good with red beans, black eyed peas, or large white butter beans on the side too. But my family always added the bean on TOP of the cornbread, on their plate, that is. So before trying yours here, I can already couch that this is HEAVENLY!!! :):)
You can only use a no-stick skillet if it is ovenproof, and usually those handles are not. What you can use is a glass baking dish. Just grease it and layer it and bake as directed. Make sure it is big enough that your casserole won't overflow (or use two casserole dishes). Thanks for your question!

Betty, I was wondering something. I have never used peanut oil for anything other than frying. When used in something like cornbread, does it give the bread a different taste than veg. or canola oil would? I feel like there is a difference, subtle though, when you fry with it, so I was just curious.
I find peanut oil acceptable in something like cornbread, or even cake. However, a lighter oil, like canola, would have a slightly lighter taste. It's just your preference.

If the meat is completely frozen, you will not be able to brown it properly. If there are just ice crystals here and there, it will be okay.
