I think they practiced before filming. Revised the lines and stuff. They usually do that before shows in order for the shows to go smoothly and contain as little errors as possible.
Siwon has studied Mandarin before, but there's still a lot that he doesn't understand, so I doubt he'd understand this much Cantonese.
HK people talk like that too except just not mixed in w/ Korean. For the longest time, I didn't know the word that is commonly used for elevator is acutally an English word! It's 'lift', but because the accent has been butchered, it sounds more like leep. Actually, I'm not sure about Mandarin, but I'd imagine that it'd be more commonly used now.
