On the options screen after the positions screen, there is a "controls" option where you can choose one of three control styles.

With the Wiimote + Nunchuk, you'll have full control over fielding and baserunning, as well as expanded control over pitching and batting.

If you don't want to use motion control then you can use the "Wiimote held sideways" control style, AKA NES-style.

You can also turn off the in-game control explanation.
