What an amazing woman you are! I research all kinds of youtube videos for recipies but I always end up coming back to your page for the one I choose!! Here I go with the chicken noodle soup...I'm sooo nervous!! Thank you for taking the time to help all of us.
Hi Betty! Is there a reason why you say to cook the chicken on the stove top first? Because I have a tendency to want to boil the chicken in chicken broth rather than to fry it. Not only that, but I use the broth in the soup after I've boiled the chicken in it.
Is doing it that way bad for any reason, like affecting the taste or something?
You're such a lovely woman and a great southern cook, it's really wonderful that you share so much of yourself on youtube.
@smokeemonkee Thanks for your sweet comment! I cook the chicken on the stove top in order to brown it up, and that makes it more flavorful. You may just put raw pieces of chicken in and cook them with the other ingredients, but they will stay white and will not add any flavor to the soup.
@steflondon88 You will see how to make chicken broth in my Chicken and Dumplings, Part I--the Chicken video. You may put wine in chicken soup, if you choose.
@spotlight792 I would advise anyone to use fresh chopped ingredients if you have the availability and time. Since a lot of people don't, I also give recipes using canned and frozen foods.
@spotlight792 You can find most things canned; for some people, that's the best option. Others may want to use leftovers, or buy a rotisserie chicken, or cook a lot of chicken in a slow cooker--lots of options!
@spotlight792 Place about 3 chicken breasts (salted) in a slow cooker and cook for 4 hours. If you don't have a slow cooker, put the chicken breasts in boiling water, bring back to a boil, reduce heat, and cook until nice and tender with no pink showing.
This was another delicious recipe as always Ms. Betty. I made it tonight because I was feeling under the weather and I swear it made me feel better than cold medicine did. My old chicken soup recipe, may it rest in peace, is about to be replaced by this one. Just went back to have a little more as a midnight snack. Thank you so much for the recipe!
You hit another homer right out of the park, my friend! It's late and while I should be heading to bed my stomach is RUMBLING after watching this video. Your presentation is EXCELLENT! As for broth base, I've found Knorr's Chicken bouillon cubes give homemade Chicken Noodle Soup that "Campbell's" flavor. That is, if that's what you're after.
I usually make Chicken Noodle Soup using the leftover Whole roasted chicken from Costco or Foodland here in Honolulu.

hi betty! my family love this soup! the only thing is how can i get the noodles not to absorb all of my broth? I can have plenty broth then 10 minutes later i open the pot and all of it is nearly gone!
Thanks so much for posting this! I have leftover chicken and I am super sick! Looks easy to make and I'm sure tastes a lot better than canned soup! Boyfriend is running to the store to make it for me! :)

P.S. I loved the video showing your milk pitchers. You have a beautiful collection.
Excellent! I forgot about using mushrooms. I'm going to use your video in conjunction with another video. The only main thing the other person did differently was that he boiled a whole chicken, separated the meat, and used the fat/skin in the original water to make the stock. Then he separated the fat/skin from the water, and did everything else normally.
@raby760 lol i'm doing the same, using info from another video in conjunction. I think you may be using Jack's video....your description follows his recipe.
i made this today and i like it :))) i did everything the same but only the chicken broth because i they don't sell it where i live so my soup was a little bland
@djshred69 Just heat 1 or 2 cans of chicken broth. When it comes to a boil, add noodles--enough to use up the chicken broth. Reduce heat and simmer a few minutes until done. You might want to search bettyskitchen for brown noodles. I did the same thing with beef broth and noodles.
@bettyskitchen The audio & video quality & clarity are stellar! And the chicken soup sounds like it might be pretty good to eat. Did you use a camcorder or a webcam for this? Love the presentation!
I'm a college student that has never cooked anything from scratch (besides chocolate chip cookies). I have been feeling under the weather lately and my friend gave me a can of chicken noodle soup and Thursday morning I was craving homemade chicken noodle soup.

I really love chicken soup, but why people in the usa, using chicken broth or chicken stock all the time when they make chicken soup which drives me nuts, because all good flavor and tastes are contained in the chicken broth, American chicken soup is so easy, anyone can make delicious soup if you have money to buy a chicken broth, im sorry Betty i love your channel that i have learnt a lot things from you, However , i never use chicken broth or stock, my soup is still damn good,

Thanks for your lovely comment! You are very welcome for the recipe. I *love* your idea about freezing leftover stock in ice trays! Thanks for your feedback on the soup!
Thank you for another yummy recipe. I've always love chicken noodle soup, especially when I'm feeling under the weather. I usually buy frozen grilled chicken from Costco to save on time when I cook, will those work? Thanks Betty!
Good Morning, Jimmy! Yes, I've noticed that your circle of friends (?) have a lot to discuss. Just curious--do you feel passionate with regard to what you write, or is it just and intellectual pursuit? BTW, I love your voice ("as most women do").
This looks delicious! Really warming and comforting but great for all occassions. Also, whilst i think your figure is enviable, could this be good diet food? (depending on how fatty the chicken is and how much butter/margarine is used?)
I think it is great diet food, the way I made it--with the chicken grilled and all. It has approximately 240 calories per serving (1/4 of the whole pot), and the fat grams are very low, since the chicken does not have added fat, and the main source of fat is the butter or margarine used to saute the vegetables. (You can even cut this down without losing a lot of flavor.) The broth is virtually fat free. Using this as diet food, please leave off the crackers. Diet food can taste great!
It's nice to cut some fresh herbs on top of the soup, too. Obviously, that won't work in the dead of fall/winter soup season, but right now it would be great. I love to use parsley or lemon thyme.
I started to put parsley on top, but opted for the cracked pepper! I didn't think the two would look right together! I've not tried lemon thyme on top, but it sounds great--and both herbs look so pretty on top of soup when they are fresh! Thanks, Patsy!
I love your videos, i am young and love to cook, I tell my mom to make this and that ! :)
