@YourProduceGuy For the egg wash flax seed gel blended with a little almond, coconut or other milk alternative works well. Just Google flax gel for a recipe.
There are several recipes for vegan Parmesan cheese. You can often find ready-made Parmesan cheese at any health food store, but I will probably make my own using this recipe:
@2close2themoon How about some soy cheese in place of the parmesan? And don't they have some egg substitutes that you could use for battering them? Shouldn't be too hard to switch that recipe over for you. Let me know how it goes!
@YourProduceGuy -- I will use nutritional yeast in this recipe instead of Parmesan. Ener-G is the commercial egg replacer, but it's just another flour (potato and tapioca), and I love the idea of using rice flour with the zucchini and wouldn't want to overwhelm it. I might use hemp milk for the wet part of the batter; it's savory and relatively thick. If it doesn't hold, I may try souring it with some vinegar (which is what's done to make vegan biscuits). Sorry, but that has to be the worst recipe for zucchini I have ever seen. As thinly sliced as those are, they are horribly overcooked and yet the crust is not even; hot spots and uneven browning. My Italian ancestors are turning over in their graves.Just by thickening the slice, it is possible to slightly improve this disaster, but then again, they would no longer be chips. Best to round-file this and look for a proper recipe for this delicate squash. Sorry.

@4swordlink2 Not with a regular cucumber I don't think. You have too much moisture content in those cucumbers. Now, if you were to use an Armenian Cucumber that has a much lower moisture content you might be able to do it. But other wise I think you would end up with soggy instead of crispy.
