  • Yummy!! I like to put some sliced grape tomatos in it...I also add more herbs like cilantro, green onion, regular mint. I make mine a little more sour and less sweet...3 tablespoons of sugar...yikes!  Are we baking a cake?

I mean I know what your doing, your trying to modernize Khmer food, but if it aint broken, please don't try too fix it...!!! And oh yeah..If somebody that doesn't know anything about bahok they will probley think this is how you make bahok but really this aint the way..So please..please...dont say this is bahok sauce when this really aint..Thank you..

  • @dopeboylai It all depends on what type of Pahok Sauce you are accustom to really. Some people prefer a more watery sauce. What is good to one might not be the same to others. I am not claiming that this is the proper way but rather show how I make mine. The Pahok was reduce down and combine with other ingredient to make a sauce. If you want to get specific with definition then just strain the juice from the jar = Pahok sauce, and no need to mix with any other herbs or ingredients.

I will try your recipe and supprise him with my cooking. I agreed with you. It all depends on how you like and how much Pahok you want to use for your Sauce.

  • how much amount do you add for the pahok?

  • @DisTrulyOne It depends on how much you can handle the taste. It is fairly salty if you use alot so you will either have to omit adding salt or be cautious about it. You can start out making the sauce with 1-2 Tbs of pahok. Add in small amounts and if it's too overwhelming then dilute it with boiling water. I hope this helps.

  • @XxXSaNdy603XxX Yup! This is a great dish to enjoy and serve even to foreign guest. I know some people are frighten by the sight of watery dark pahok sauce but if you make it this way I am sure they will at least take a bite and try it.

    What are thai peppers? And how are they different from Khmer peppers?

  • @tofoodood I think the answer will vary depending on the person answering. Believe it or not, not many people know what or where Cambodia lies within the map. Some are more familiar with Thai, Chinese and Vietnamese food and therefore the ingredients tend to have some sort of those country names in there. Cambodian have the same chili pepper too but instead of getting into the name and origin we just go with what mainstream is familiar with. Save the food history for another discussion.

  • @tofoodood The difference? To me I think it's just the name. Mainstream is more familiar with Thailand than Cambodia so people tend to refer to ingredients with the word "Thai" in the front. For example, Thai Basil, Thai Pepper, Thai Eggplant. Those same thing are also grown in Cambodia and throughout many southeast Asian countries too.

  • @KhatiyaKorner The proper name for those little egg plants are green apple aubergines and the chili's are miniature green or red chillies. The names were bastardized by the british because that's where they saw those ingredients first widely used. If Cambodia was occupied by the british instead of Thailand then they might be called khmer chilli's or khmer eggplants. Or Imagine this "Thai Kick boxing" called "Khmer Kick Boxing"? What a concept. Know your history.

  • @KhatiyaKorner Because the Thai's sold out to the West before any other countries of southeast Asia did. The Thai's aren't even indigenous to that area where they are now. They were chased there by the Mongols and we the KHMERS helped them, but we got fucked over too. Lost a great portion of our Empire and look at how the Thai's view us now..

  • i roast a few garlic and lots of thai peppers, put them in the morter and ground them... also i add thai lime leaves, basil, and mint. love the sauce extra spicy!

  • I know, this might be new to some people. But this is how I grew up eating it and this is how my Mother got us eating pahok without the strong smell and the unpleasant sight. Doesn't it look more like a salad than a sauce?

  • Ahnchovies sauce is very good too. I tried it once at Hak Heang Restaurant when I was in Long Beach last September.

  • Well, I don't know if it has to do with elevation (Mile High City/State)? Or maybe it's not the same type of rice. I used to buy rice that isn't sticky either. I still have some which I only use to make Rice Porridge. But there's Asian store there that you can buy like 25lbs once you get settle.

  • I don't think it's the same as brisket. An example of skirt steak is a fajita. Mexican's use skirt steaks to grill for fajitas.
