There are calories, kilo-calories (kcals) and Calories, some clarifications. As you correctly stated a calorie is the amount of heat or energy required to heat up one gram of water one degree Celcius. A kilocalorie is 1000 times this so you could heat up a 1000 grams of water 1 degree Celcius. For some reason in the food and nutrition business the term kilocalorie is not used instead they call a kilocalorie a Calorie. Yes with a capital C. Very confusing. Students get it wrong all the time!

If your body is in need of glucose FAST it'll pick other things (sugars,etc) and transform them since the process is easier.
