If not, just stick with the pork shoulder with 15-20% pork back fat for coarse ground sausages (like bratwurst) or leg (ham) trimmings with 15-40% back fat for emulsified sausage (like Knockwurst)
I just bought this kitchenaid attachement today. It was kind of hard to stuff the sausages, but it worked. You guys made it look so easy. You had a wooden "stuffing" tool. The one that came with mine was plastic.
We bought that one separately, it does work better. We had some trouble with the blade at first, but then it was pretty easy. Thanks so much, I love getting comments! Enjoy your sausages!

Do you all make one long strand, and the twist, or do you twist them off as you go? Seems like when I tried doing it after, the casing would break.
