Do you have to tell the camera when to slow down (i.e. you started in regular motion, then went into slow motion)... or can you go back and make certain parts of a clip slow, as you please.

no, you have to push a button to enter "slow-mo mode"

of course you could record the entire video in 210 fps and speed certain parts up, but that costs alot of memory
