I am actually finishing up a muscular rig within the next few days. I will cut down the repetition and work out something to demonstrate the other two suggestions. I have some stuff that uses the same principles as fat simulation just applied in a different way, so I will work on getting that onto a fatter character for demo purposes.

Yay, you have a million controls that work.
Boo, you show us each and every single solitary one of them on each of your rigs.
We can assume that if you did it once, you can do it again.
Show me
-muscular shoulders/hips/necks. with huge motions that should break a character.
-a fat character that looks like it's made of fat (see Gusteau's second chin)
-an old guy with skin hanging from his bones.

One more thing that's really impressive: A good eye rig. Take a close look at what your eyelids do when you roll your eyes around.
If it's happening automatically in real life, it should happen automatically in your rig. Just remember to provide user override.
