@Sammy117 add enough flour untill it is a light creamy fluffy not to thick not to thin pancake like batter so when you batter the fish it coats evenly and has a nice layer of batter

you can use sparkling water, it wont be as good but it will do=)

If it is the alcohol that is the problem, a non-alcoholic beer is fine. In fact, by the time it is cooked, there will be no alcohol left even with normal beer as it all boils away during the cooking process. It is the taste of the beer that is important - not the alcohol content.

Or, as others said already, just use more water instead of the beer - the beer is used to add some extra taste to the batter - it is not essential.
