To those suggesting that the meat is contracting as it's being cooked: Bollocks! Cooked meat does indeed tighten and contract to some degree, however since the proteins are irreversibly changed in the cooking process, they can't then revert back to the former position. The movement you see in this video is that of live Abalone being cooked, not the imaginary suggestions put forward in previous comments. If your steak waves at you when you cook it, I suggest you have a word with your butcher.
@Drpetya1965 those are already dead. before abalone are eaten they have to be scrubbed and pared. the moving is the meat contracting slowly as its cooked. :)
@Drpetya1965 abalone dont even have the proper nervous systems to feel pain like we do. but like the other guy said, the moving is just the heat evaporating the moisture out and making the meat contract. think of it as popcorn popping or a piece of steak shrinking.
