  • Consuming this dish the way it is prepared and having the noose on neck cannot be two different things. The recipe is horrifying. There is no shred of anything healthy or even remotely nutritious abt this recipe. Sure, it will be very delicious to the tongue. But, we will be injecting poison into our system by eating such an oil and fat soaked dish as this. Our country has a steep rise with obesity, blood pressure, diabetes and several other concerning health issues even with youngsters.

  • Hi Chef. Isn't Bagara Baingan supposed to be stuffed & then put in gravy instead of fried & dipped in gravy? I'm confused at how authentic Hyderabadi Bagara Baingan is cooked.

  • Can I grind the peanuts WITH the skin on? I thought I had to remove the skin and have been doing this for years. Also, why does my Bagare Baigan turn so dark?

    Is it the Imli ? I never put Fen Seeds and Jaggery or sugar? Is this the reason my dish is dark? Please help as I want to cook this dish tomorrow.

  • I made this for the second time. Delicious, but I think I fried the eggplants too long. They turned into mush by the time the dish was served.

  • i thought baghara baigan is made with only peanuts and sesame seeds and not coconut...also have never eaten this preparation with whole garam masala....

  • @ndbtube he's making it the same way the traiditional recipe calls for it. This dish does call for a rich, oily masala.

  • My mom used to make this whenever we had guests, it was always an instant hit...

    She used to add cauliflower florets and bell peppers (capsicum) sometimes instead of eggplant... For everyone who's allergic to eggplant, you can substitute with cauliflower florets/capsicum...

    For Hyderabadis, Joshi masalas in Badi Chowdi, sells excellent quality readymade bagara-baingan masala,for everyone who doesnt have time/knowledge to stock all those different spices at home, just buy the readymade one!

  • i think he mentions it briefly but also says that he avoids adding green chillies... its somewhere in the part of the thadka, where he adds the fenugreek seeds or so...

    It is a must for vegetarians in all parties.

    A good combination with fried rice and veg. biryani.

    Cld you also show us how to make Stuffed Baingan. I think Stuffed Baingan is also made with small brinjals but its dry.

  • About 10-12 years ago, I saw one of the episode of Sanjeev Kapoor's Khana Khazana on Cable TV.

    He fried eggpants than he made a gravy just like butter paneer masala's gravy, and all small pieces of eggplant was floting.

    I have been looking for that recipe without luck.

    But this is very close to that!!

    finally, now I feel good!!
