I think they just put that line in there to show the viewers that Pilsuk gained weight again. Pilsuk also says she doesn't care what the media says about her weight, because she's the happiest she's ever been, and Jason says "me too". This also shows that they're together.

Plus, at the end of the 1st season, it shows Baek Hee taking place of Teacher Shi and reusing her former teacher's method of spilling thumbtacks on the floor and having everyone scramble to pick them up before 5 min. was up. So I think Eun Jung will be back, but as a teacher.
