  • So much coffee bitching on here, it's insane.

    The guy in this video is a barista champion, he knows his stuff. If you look at the video date you will see its from 2006. Since then there have been so many advances in the way we make coffee and all these tiny things we do like tapping the portafilter. We are learning these things all the time.

  • I love how everyone here bitches and moans cause they are jealous of the guy in the vid who is a USBC champion btw. All this dude does all day is test machines, choose what roasts and beans for a large coffee chain to purchase, pull shots, and sample beans from different farmers. I'm pretty sure its obvious which one of the people knows what hes doing, and its not the 12 year old youtube viewer who "could bitch about aspects of your shot" LOL

  • While I could be an armchair barista and bitch about aspects of your shot, the result looks very solid and that's all that matters. Results. Nice pour, great-looking coffee.

  • Don't tap the head, ESPECIALLY with the tamp. Smacking it like that can crack the cake. Also, don't twist the tamp when in the head. It shifts the cake and that can easily put it off-center or make it uneven. Nice effing pour though.

  • the froth is thin for either latte or capacinno, indeed the rosette is well formed. Milk texturing is there, I think if he left the steam pump for 2 more second it would make the froth denser.

  • who said good tamping? your shot gets channeled when you tap you portafilter your coffee gets channeled... try the north-south-east-west technique wish consists on slightly tamping the four corners of you coffee\portafilter, then tamping it at last with 3\4 of your weight on ...clean the around it and pour!

  • pretty sure your meant to tap the group handel to get out pockets of air so i dont know what you're on about, the extraction looked nice, thick, like honey mmmm...

  • actually, tapping the group head creates the channels for air, causing uneven distribution during the brewing process. Sometimes it wont effect the shot... most of the time it will causing some parts to be either over or under extracted.

  • lastly, no matter how good a coffee might look - even if it is latte art - it is coffee. i know that sounds pretentious but its the truth.

  • (anyway, tapping the group is not such an issue, it's just "I" think it's a little too hard in this video - additionally, repolishing will not solve the problem as the coffee has already been tamped and thus has already taken its shape.)

    1. The video does not show the entire extraction, so how in the world would you know that it was too fast?

    2. AFTER he tapped the 'group' he tamped and polished again....

    3. This video is about the pour, not the extraction....and sorry...it DOES NOT get much better than that....

    But I guess, as ususal, some people have to find something to bitch at... even if there is nothing there.

    How thick is a well made espresso supposed to be?

    Because I keep hearing that a 'good' espresso is thick, but the problem is, I'm not really sure what 'thick' is...

    Is it supposed to be maple-syrup thick, peanut butter thick, or fudge thick? Or a combination of watery/syrup like thick?
