There's a huge difference you 'Canadians'.

This is made with Mozzarella slices.

Poutine is made with White Cheddar Cheese Curds.

it makes me canadian heart so happy to see all the rants 'these aren't DISCO FRIES, it's POUTINE!' and really, it is...cheese curds on fries, then smothered in gravy...so delicious, it's best when you get curds so fresh they squeak and gravy thick enough to mortar bricks with it, all topping some kick ass hand-cut steak fries from PEI Cavendish potatoes :D only way to go

That's not poutine...poutine is done with curd. Disco fries are done with either mozzarella or American cheese.
