@jackholexxx That is very true what you said about good pho and good steak not needing any additions, but I assure you, it does not need anything to make it taste better. We who eat pho often just enjoy the flavor of pho with the additional sauces. In my case, I always drink the broth before I add anything into it.
I wouldnt trust anyone's judgement of a pho restaurant if they put that much hoisin and sriracha sauce into his broth. All you are doing is adding additional MSG, sodium, and unnecessary flavors into an already perfectly created beef broth made out of real bones.
If you find good pho, you don't need any hoisin or sriracha to enjoy it. Maybe a tad squeeze of each but not much as you do. Just as a good steak doesn't need A1, good pho doesn't need all that extra flavoring unless it truly need it

Here in Montreal, Canada there are a lot of amazing Vietnamese Pho restaurants. If you have a chance to visit you will not be disappointed. Other thing I notice is a great deal of Vietnamese Pho in US cook by Chinese-Vietnamese owners (they always hang chinese sign on the wall) which is not a good sign. Saying that I mean Vietnamese cook chowmein will not be as good as Chinese cook does.

I like my pho with extra lime. Add a lot of siracha hot sauce and a little hoisen sauce. Now there's a soup that is spicy and tangy mmm damit! I want one now! Gotta try that place.
I have not try Pho from this place yet but it sure looked good. Will try it someday.

The Pho restaurant I like the most is Pho Saigon. It has about 10 restaurants around Houston. If I in downtown I can go to Pho Saigon Milam. If I in the northwest I can go to Pho Saigon Tidwell. If I in the southwest I can go to Pho Saigon W. Airport at Eldridge.

They have it all over the city, and trust me five dollars will fill you up with a bowl of pho. :) Btw that licorice taste/ smell is what we Asian use in certain dishes, mostly soups to flavor savory dishes. It's called star anise, and yes it is in the shape of a star :)
If you come to Austin ever, look up Tam's Deli and get some Pho bo Tai Chin. Best I have had so far in this town! Tai Chin refers to the rare steak and well done brisket in the Pho. The "black bean" sauce you are showing is actually the hoisin sauce. Star Anise is one of the things in the broth making it licorice tasting. Pho is the best and I have become addicted!!! Going to have to check this place out next time I'm in H-Town!

Pho 21 = McDonalds version of Pho. Real Pho cannot be mass produced like hamburgers.

We tried Pho Binh five times this year.
Pho Binh is going down hill..: big bow , a lot of meat, good noodle ,,,but below average broth...
Swanson soup broth has better flavor than Pho Binh.
Pho Binh is made for "American not for Vietnamese!"
