I like your idea for the sloppy Joe's. I did have a thought that using all the same ingredients but instead of sloppy Joe mix a chili mix. This is just another idea for the trail.
Tinny, two questions. The "joe" looks a tad runny, have you thought about using corn starch? Also, are you familiar with Steak-umm thin sliced frozen steaks? I've got to wonder if those might work out better for dehydration and reconstitution than the ground beef.
I ask again Tinny, why do you not write a cook book? Make it packable and it to will sele. By the way you only used 3+ scoops of gravle with 4 it would have thinked up more than it did.... It's good to be Tinny.
I know of a type of cornstarch you can get that well thinkin without having to be simered. Also a little bit of powered geletin might give that the meatiness and fatiness you want.

I've had success with the following to add a little fat to dehydrated hamburger. Meals with taco or chili like spices I've added a tablespoon of shelf stable bacon pieces/bits or EV olive oil for Italian style meals. Ghee has worked in a pinch but is better with meals with tuna/salmon/chicken that is rehydrated or from a pouch.
i love sloppy joe's .... tinny ... did you notice that when you mentioned the "spork" .. you must have lost count ? ... you said you would put in 4 heaping spoons of hamburger.. and probably a little more.. but if you look closely .. its only 3.. and a little more ;-) .. love your video's ... just thought i would mention it :-) all the best to you .. keep up the awsome videos

Another option would be to make standard Sloppy Joes at home on the stove - preferably from scratch with lean ground beef and fresh seasonings. Then, let the mix cool....and dehydrate the ENTIRE meal!
I've done this for backpacking before and it reconstitutes really nicely, especially if you let it sit in water for 30 minutes before heating. The same trick will work for spaghetti, chili, etc.
