You said "for this tutorial we are just going to stretch the texture"...would you do something else for normal work or just get a larger texture file?
@jonbgallant it actually depends what you want to do with your final image. For print I would either find a bigger texture or extrapolate it in 5% incerments in Pphotoshop to keep the quality as best as possible.
