@mybraceletsify Molasses is a thick, brown, uncrystalized juice which comes from sugar when it goes through the refining process. We usually purchase it at the grocery store. It's usually in the section that has honey and corn syrup.
Oh these cookies bring back a very memorable exper when I was a child. A friends mother had baked these & they were laid out on a big plate in the kutchen. My friend swiped the plateful of cookies & we ate them in her room until we were nearly sick. The 'after-effects' from the molasses was - well, let's just say, I couldnt go out & play for a full day after gorging on those lovelies. Thanks for the great recipe C !
Ginger and Christmas just go together I think. One of my fave childhood treats were so-called "Swedish Ginger Cookes" from a 1960's Better Homes & Gardens holiday cookbook. They had a toasted almond on top and a hint of orange rind in the dough. I like traditional gingersnaps best, especially if they have lots of molasses in them!
One question chef, why would I "sour" milk? Adding acid to milk just curdles it I think? Would this change how the liquid behaves in the dough? Is it for taste?
@bagelboi66 Another question, what kind of mixer is that? It seems really powerful. I have a Kitchenaid 5 speed hand mixer and I know it wouldn't tackle cookie dough. I'd have to use my stand mixer for this recipe, yet your hand mixer doesn't even seem to slow down adding the flour.
@bagelboi66 Oh My Goodness...LOL...We always used to joke around here and say thet I should get a job testing hand mixers because I have burnt out about a zillion of them...LOL. The one I have now is just a Hamilton Beach mixer...not very expensive, but one toch little bugger. I Luv it...knock on wood :)
@CookingWithCandra i have the same problem with hand speed mixers which is why i'm so picky with them because i bought 3 and they stop working after 2 uses which is a waste of money so i stop buying them they don't work well. Standmixers on the other hand are perfect for heavy doughs or when i'm just lazy lol
@mybraceletsify I have an awesome stand mixer too, but I tend to stick with my hand mixer when doing videos, so people see that they can make my recipes with the usual everyday equipment instead of having to buy specialty or expensive tools :)
@CookingWithCandra yea thats true i'm think of doing cooking videos but need a tripod first i only use my stand for bigger stuff like bread rest i will do by hand lol the only thing i hate about baking is the aftermath of dishes lol i'm gonna try this for christmas :)

We can't get a hold of the real old sour milk from days gone by because everything is pasterized now...when it goes sour, it's rancid and shouldn't be used. I often sour my milk when baking because the acid adds some flavour and it also makes the product a bit more tender.
