  • It would be nice if people posted useful comments. I made it this wk & it was great! First time I tried couscous or asparagus or any of John's recipes. This was so easy (I don't know how to cook) & flavourful. You can easily change it up. Perfect for someone who doesn't like rice (aka me). I feel inspired to learn how to cook now. I will be trying more of the recipes.

  • @laylabamashmous Personally I would either just skip it or used diced Pablano/Pasilla peppers :D

  • @laylabamashmous just leave the jalapeño out, you can add fresh green peppers if you like as well... but I found the spices had enough of a kick without the jalapeño :P

  • Thank you! I tried this out yesterday and it was delicious. Naturally i couldn't find any asparagus when I needed it, so I substituded with green beans, cauliflower and broccoli, was a little too liberal on the spices, but it was still very yummy!

    Could you do more vegetarian recepies - 2 more weeks of lent to go and my cookbook is already stretched on vegan recepies...

  • @LuvCatz905 It's not a meal, it's a side dish that I will eat with my medium rare steak. You can watch the collagen in your nose droop from lack of animal protein.

  • mmmm, I made this for dinner, only instead of couscous, I used quinoa and sprinkled a little parmesan cheese on top. YUM

  • Could you use quinoa the same way you did the cous cous, or does it need more time to absorb?

  • @kails333 I did that exact thing for dinner, I rinsed the quinoa for a few minutes and then brought 1/2 cup of quinoa and 1 cup of vegetable broth to a boil, then I let it simmer on the lowest setting for 20 minutes.

  • @1964Yojimbo its a good idea but the carrot will overpower the rest of the vegetables unless you add vegetables like peppers to even out the colour =)

  • @bubbleboo06 Try Israeli couscous. Its larger so it has to be boiled like other pastas. Drain and saute with butter, carrot, celery, onion and garlic. S&P to taste. Goes great with pan seared or grilled fish.
