Because it only profits those who farm it, while being worse for YOU. The fish are all crammed together and get sick so along with their meal of PELLETS, they eat a nice amount of antibiotics. Not too good mon.
Nice recipe Dani, but if I might say, I wouldn't saute with Extra Virgin Olive Oil, its not really refined enough for that type of cooking. Its better for dressings that don't involve cooking. I would suggest using Olive Oil, You'll still get that flavor, but won't risk burning the oil.
I've never made that type of fish...but I'll plan on it soon! Also, do you know a recipe that uses fresh kale? I've made it because I know how healthy it it....but it's soooo bitter!
This looks delicious. I would add slivered almonds to the greens to make it even better.

this is a nice recipe except I would use cod instead of sole. sole is too delicate for those kind of greens.
