How do you do it when you shoot? Do you stick around to keep watch on the camera? I mean - shooting during night etc. to get the starfield will take huge amounts of time!
Most of the sequences are only around 20mins in duration, so I stick around for those. I have done a timelapse of stars, and left it outside all night, only to find it drenched in dew in the morning!

I'm sorry I believe you're wrong here. Think about that. 3 seconds between each frame. That means you only see 1 frame for 3 seconds, or a total of about 20 frames. There are way more than 20 frames in this movie. It is still lovely.
If we're talking about the play back frame rate, then it should be called 25FPS, a frame rate most common for TV PAL, but the title refers to the rate at which the frames were taken, which was 1 frame every 3 seconds.
Ah I see. It just seems awkward using it in a ratio - to say I took .3 of a frame for 1 second giving me one frame whole frame every three seconds. I guess I'm used to seeing it in playback rate.

The Canon 30D has either 3fps (low speed continuous shooting) or 5fps (high speed continuous shooting) where do you get 0,3fps?

Its called 0.3 FPS because it is 3 seconds between each frame, not 3 frames per second.
