I like the Gorgonzola Cannoli, it looks like it has rich in flavor, a crunchy & soft texture, and it's presented as a very colorful part of the cheese platter.
This is...the only ep I've ever seen after hundreds of Iron Chef episodes, where there was no negative critique towards a chef. Way to go, Batali, way to go.

and besides we eat livers, snails, molds and all kinds of strange things, what is a little bone marrow ahah :)
