I usually make rosti using raw potato. But there is a sense is boiling the potatoes first before grating them as raw potatoes secret too much moisture and also changes color if not covered. But rosti made with raw potato is less time-consuming.
I love Rösti coming from a German city that borders Switzerland but the way she makes it is the way of the people in Bern. There is also a version made with raw potatoes
@chenhuixian92 It is much easier to peel them right after they are cooked that way you waste much less potatoe. After you peel them I find it best to pu them in an air sealed container (e.g. Tupperware) so they don't taste like fridge

no the potatoes dont have to be in the water over night, the potatoes have to be in the water for about 15 minutes (depending on how large they are) and then u let them cool in a bowl and leave em at a cool place for about 15 hours and then u make the rösti.
I didn't know you have to leave the boiled potatoes over night in the fridge. That explains the very sticky and soggy skin they have each time I make it...

when i make rösti (which isn't often) i make it thiner and with cheese the taste is then better you can also add other vegtables or bacon
as it is shown in the vid it's a bit tastless

It's the best way to cook potatos. That way you have a nice taste otherwise potatos are bland.
