The aircraft shakes soo much so if he/she has hands the controls while its bumping theirs a chance that their hands would push the stick down when going off the deck (thus splashing the aircraft). you notice he takes control as soon as the aircraft smooths out.

@cxdougxw Wrong, the Tomcat has been retired. The Hornet has taken it's place. During the shot look at the pilots hands. They are on the canopy rail during the launch. This unique to the Hornet.
The Pilot also keeps his hands off the throttle, as the acceleration from the Cat can force the pilots hands back, throttling back the aircraft - Which is bad if you're trying to fly and not swim.
The pilot keeps his hand on the towel rack because any input from moving the stick while still on deck might confuse the flight control computers and make for an interesting few seconds off the cat. Although it is not strictly required, 99% of Hornet pilots use this technique.

Im a Marine Corps fighter pilot with VMFA-232. but i will say, good call. you know your flight suits. but as a heads up the color has no relevance to branch, the color if the suit is only determined upon the war zone location.
