I do not know if you can add jelly powder. You may be able to add that. But I used agar agar, which is available at most asian stores. When you get the agar packet, only use half the agar agar jelly. You can get it in plain flavor or pandan flavored. I did not used egg and the less jelly you use the softer it is when it sets. Thanks for your email, you just reminded me to make another batch today. No eggs. You can use pandan leaves or pandan flavoring. Pandan leaves juice taster much better.
I made this today. It came out really good. It gets firm by just leaving it out on the kitchen counter. I got the frozen pandan leaves from an asian store in carrollton TX. Next time I will try to make this without adding the egg into the coconut milk. I may even try to add some chopped up tender coconut into the mixture while it is cooling.

hmm doesn;t really work though.. i don't seem to see the two layers ( bottom with jelly and the top is the coconut milk with eggs) .

They call it batik jelly as the eggs kind of curdles and create the batik design. But it taste the same. No eggs, less cholestrol friend.

u can also use pandan essence..no need to blend or find pandan leaf..:) gd luck!!~
