I think he walks slightly differently, punching noise is different, maps on the very first couple of parts are different, screen just fades out and no 'yeah' at the end of a section (best bit of the final version!) taller explorer enemy things appear to be defeatable with one quick punch as opposed to 2 of them or one charged punch in the final version, music sounds different (although i'm only familiar with the ps version). I could go on but someone's probably listed all those already :p
I compared Jag Raman (4MB) to my PS version (97MB inc music) side by side on my HDTV. Both look very similar. People go on about the Playstation version being better, but the only real differences are the PS version has a few more flowers, and a few more layer's of Parallax scrolling on certain levels. The Jag has some extra stuff too, has to process music, and decompress data in real time which the PS version does not. Given extra space, the Jag version could easily match the PS version.
Rayman's move cycle and his hurt animation are different, his dance is different when he gets a new power, and in the final version, the lives would say "03", not just "3".
A lot of sound effects are different (some aren't even there yet) and the music too (but those tracks do really rule!) there's no "action" text in the final
There aren't any tings before the level with the rising water (forgot the name)
Rayman moves differently when he recieves a new power and those "training levels" have completely different maps!
Where did that mysterious buzzing sound at 8:40 come from?
The part from 9:25 is also a little different from the final
We in the Rayman fanbase noticed an assload of differences between this and the final. To list a few: Electoon Medallions are different, Rayman's completely different walk cycle and hurt cry, and later on the Magician takes you to the breakout game when you pay him 10 tings.

I actually prefer the walking animation in the beta version.

@meowmmmmm You forgot to mention sounds. The Jaguar lacks sound effects. Still, I prefer the music here over PS.
