Just made my very first cannolis. It was an all day experience, but well worth it. This video was very simple easy to follow and help me make my first sucessful batch of cannolis.
Can I use just a regular red wine for the recipe? or does it have to be Marsala wine? Also for the canoli sticks any particular wood? or just regular dowel wood?
@scuddsy Yes, you can use red/white/or sherry wine. Also you can add 1 oz of your choice of flavored liquor, to 1oz of water. For dowels you can use a clean wood mop stick .

Amazing!! I made shells exactly as indicated - with home-made forms - and fried them in sunflower oil. I used a filling of ricotta/cream cheese with a little sugar, vanilla and lemon extract and they came out absolutely incredible. Thank you for the video!!! My dad is from New Jersey and you remind me of him so much - accent and all - love it! :)

This is my favorite cannoli recipe ever! Everyone loves when I make them. I don't fill them until they are eaten. I keep the ricotta in a pastry bag until I need it, so they don't get soggy.
@TheIndieindian (theindieindian) if you are baking the cannoli, then you should only use ice cream, and then freeze it, which will prevent it from getting soggy. if you want to use ricotta cheese, then you will have to fry the cannoli, and then refrigerate it. you can use milk in your recipe in place of wine, it doesn't make much difference, the liquid content would be the same for the recipe. hey! thank you for the compliment! for the wood, i did not do anything to treat it - you should use untreated wood and can buy it at any hardware store or home depot! let me know how the cannoli's turn out!

hi i'm not videoqueen but you can fill the cannoli with ricotta filling: i like to just mix ricotta with powdered sugar and lemon zest. some ppl add candied citrus peel and nuts, but i like it plain. make sure it's not too sweet

hello videoqueen, this recipe really looks good, especially since you show how they can be baked.
do the cannolis get soggy if you fill them up with riccota? would putting them in the fridge after filling them help it stay crispy?
also if you used milk instead of wine, would you have to add anything else? is the texture that much different if you use milk?
