@daevczen I dont know about that. I made some bread with the yeast from the bottom of a Chimay bottle (red one) .. pretty darn good... I also used an eighth cup honey and eighth cup molasses with a half cup raw sugar... (750 grams flour) with hazelnuts, apricots, walnuts, raisins... what have you... basically, your hangover morning bread... (well toasted) Hope my half recipe works out for you all... (I recently bought a wooden spoon and plan to send it to Owen.. wth no wooden spoon Owen?)

Then I realized the pan was too big for the oven. Owen suggested I use "the other one" which was in that little metal drawer that some ovens have. I grabbed the pan with my bare hand, and then dropped it on the floor because it was extremely hot. We had a laugh.
I love the way you just seemed to put things together without much thought or care. Wish I could cook like that..... okay... I CAN cook like that. It just doesn't turn out well when I do.
For the record, that was never the attitude in any of the various kitchens I worked in when I was younger. But in my private kitchen, I've adopted a motto from Madame Childs: Who's to know?

OK this is like totally the most dynamic video production I've seen in a long time. It's decidedly narrative and yet amorphous. i bake bread all the time, and I think this is the utmost in simple tutorials on bread-making aver.
I bought a brick of frozen yeast at my local supermarket, and have been unthawing it as needed whenever I'm about to bake a loaf. Is it OK to keep doing this with the yeast - thawing then re-freezing it? Have I killed the poor yeast altogether by doing this? My bread comes out OK, but doesn't double in size when rising, and while it's tasty, it's not light and airy. I don't like using dried yeast in packets and I haven't been able to find a baker who'll sell me fresh (not frozen) yeast. HELP!
Regular flour works just fine. Bread (called type 550 or sometimes just type 55) flour is recommended though.
A dough sponge is just the hot water, sugar, yeast, and a little flour. It's a way to see quickly if your yeast is alive because after 5 or so minutes it should get all foamy --hence sponge.
weird, my dough didn't rise at all (and it was bout 77 degrees in the house) and I had it sit for about 3 hours. And the bread was all condensed and not fluffy at all. This WAS my first attempt at this, but I wonder what I did wrong...
Ahh, there you go. I don't know the exact number of degrees is too hot for yeast, but they say it should't be too hot for your hands.
The dough sponge should have tipped you off that something was amiss: if after even 20 minutes it isn't all nice and foamy, like the head on a beer, best start again.

I had a oven like that in my first apartment. Damn... I couldn't cook anything. Temperature monitoring was a total crap shot.
Enriched bleached white flour is so bad for you. Make your own flour from wheat berries and you'll have about 20 times more nutrients. You can actually make 1 cup of flour in a coffee grinder in about 20 minutes. Just keep sifting it and grinding it.

That's where the dough sponge comes in so handy--if it hasn't risen in, say 20 minutes, the yeast is probably expired and it's time to buy some more. I understand it is possible to invigorate bum dough by kneading in another solution of yeast, but I've never tried it. But, chapatis are yummy too, teehee!

im trying to make this bread =\ not turning out so well... 1/2 cup water wasnt enough than i let the yeast mix sit 20 min and 1 cup of flour was enough ... is this right ???
I would say 3/4 cup of hot water, but I usually just measure about a coffee mug of water and keep adding the flour until it reaches the right consistency to start kneading. You don't have to proof the dough at the beginning if you don't want to, it just helps to let you know if your yeast is still alive.
I've had problems with the right time to start kneading with the hands. every time it makes contact with my counter it decides to start sticking to anything and everything. Should I "pam" the counter a little?
Put a little flour on the table and on your hands first. If it's too sticky to handle at that point, you can still "fold" flour into the dough until it is kneadable. I think it's probably better to start with dough that is a tad too sticky than dough that has too much flour at the beginning, as you can always add flour.

Most likely, your yeast was too old. Did you do the dough sponge and did it rise?
Another possibility was that the water was too hot.
Did you remember the sugar?

Everyone I told asked if the yeast was too old, but truth is I bought it the day before I made it, expiration: September 2010 lol.
I did the dough sponge, and it did rise a little.....I think it did, not as much as I thought it would. And I did include the sugar.
Perhaps the water was too hot. I used the stove to heat it and while I didn't let it boil, but I did get it to a simmering point.

Just test the water temp as you would baby formula; on the inside of your arm!

105-115 temp for the water, just 1/2 cup. let the yeast disolve and then add the rest of the water

I could not stop watching this video. Everything about it was perfect..well except for the stove going out...oh and the burnt bread at the end...oh and the not washing the bowl...but nevermind that...its what made it perfect...PLEASE make another one.....with the music as well. Thanks!!!

thanks for the suggestion, i havent even tried since the other day.. i baked chocolate cookies for 4th of july, but no bread.. i love to make tortillas so you'd think bread would come naturally ( :

That's where the dough sponge comes in so handy--if it hasn't risen in, say 20 minutes, the yeast is probably expired and it's time to buy some more. I understand it is possible to invigorate bum dough by kneading in another solution of yeast, but I've never tried it. But, chapatis are yummy too, teehee!

Thanks. Actually, I didn't use nearly as much salt as it looks on the vid. Still, a bit more than recipes usually call for.

im trying to make this bread =\ not turning out so well... 1/2 cup water wasnt enough than i let the yeast mix sit 20 min and 1 cup of flour was enough ... is this right ???

I would say 3/4 cup of hot water, but I usually just measure about a coffee mug of water and keep adding the flour until it reaches the right consistency to start kneading. You don't have to proof the dough at the beginning if you don't want to, it just helps to let you know if your yeast is still alive.

I've had problems with the right time to start kneading with the hands. every time it makes contact with my counter it decides to start sticking to anything and everything. Should I "pam" the counter a little?

Put a little flour on the table and on your hands first. If it's too sticky to handle at that point, you can still "fold" flour into the dough until it is kneadable. I think it's probably better to start with dough that is a tad too sticky than dough that has too much flour at the beginning, as you can always add flour.
