  • Question: I know you need water on your hands so rice won't stick to your hand but why you need salt? As well that is best type of rice to use for onigiri? What are best fillings for Onigiri and how would you cook them? As well how do you keep the onigiri from falling apart on you? Finally how you make the triangle shape of an onigiri as you roll it in your hands?

    A friend told me jasmine rice is not good at all to use for onigiri. Why?

  • @GothicAnime345 the salt is used to give flavor to the onigiri. Best type of rice would be short grain japanese rice (sushi rice). you can put ANYTHING you want really. whatever you like ur rice with you can add to the onigiri. short grain japanese rice is naturally sticky thats why it doesnt fall apart. Jasmine rice doesnt stick like short grain rice. as for the shape well just practice it. mold ur hands to make the triangle shape. hope this helped.

    I went to my kitchen and saw that I have most of these ingredients, except the green leafy thing so I'm headed to the asian store to hunt it down (: maybe they'll have preMade so I can try what it should taste like LoL

  • @Zieltarzyna You don't have to have a rice cooker. You can make rice perfectly fine in a regular old pot or steam basket. The rice cooker just simplifies it, much like a bread maker.

    Seriously, think about it. People have been eating rice for centuries. Rice cookers have only been around since like the 40s or 50s.

  • I love onigiri...when I was in Japan 2 years ago I bouhgt one with tuna...and when I eat it in my hotel...it was...Woha! So delicious! I make it at home sometimes.

  • LOL...I hate making rice. only because the cleaning.

    I use my finger to measure the water.

    I can make rice on the stove top but rice cookers are easier. You have to use less water with a rice cooker because it holds alot of steam.

  • You can mix furikake (rice seasoning) in with the rice when it's cooked or you can stuff the onigiris. I have made stuffed chicken ones with leftover roast chicken from Sunday lunch!

  • In Brasil we rinse our rice too, except we have little plastic bowls that you can put the water in and then to drain the other side has little slots so the grains of rice don't escape

    I'm terrible at making onigiri sometimes I just give up and just make te rice into balls without filling and just put the nori on top ^^; still good

  • You should use sushi rice to make onigiri; regular long grain rice will not be sticky enough and your onigiri will fall apart!

  • i believe it is sushi or "sticky rice" or else it will not stick together to form the ball

  • It can taste pretty good especially if you decide to let it chill a bit and then grill it and baste it slightly with some soy sauce making the outside a bit crispy it doesn't look appetizing but honestly it can be : )

  • if its japanese sushi rice, it wont be that sticky, what u need, if u want the rice balls not to fall apart, so wash well!

  • hmm not really, actually, the clearer the rice and water mixture, the less sticky the resultant product, however, for the rice grains to be sticky themselves, just add a little more water. This way though, they also become softer.

    Try it out, slightly washed rice with little water, and then again with extra water, then thorougly washed rice once with less water, and then again with more.

    Trust me, regardless, you will never want use poorly washed rice, it results in a jello with ricebits.

  • err... how bot trying it out?, actually, the white stuff is rice, powdered, aka, rice flour. Rice flour is used to make sticky foods like Mochi and Dango. Now, if you try to cook your rice with rice flour inbetween them... what do you think happens? Yes, ultry sticky slightly mushy texture on top of the slightly more solid rice grains.... which sucks.

  • you don't want to leave the rice in mucky water anyway. You can't guarantee it to always be clear though, it's kind of impossible, but 90-99% clear is the way to go.

  • it just has to be cool enough for you to handle it. so warm to the touch should be fine.

    make sure you use SHORT GRAIN(SUSHI) Rice. I failed miserably with long grain. good luck :D

    Anyway, i tried making these earlier, and mine turned out too salty. I think i added too much salt by mistake :( The rice was also a bit mushy.

  • meh were to fat americans to fall down that LOL jk, you might cooked the rice to long or to much liquid happen to mine a few times, also it could be the rice it self.

  • Use a "cutting" or "folding" motion when handeling the rice, don't mix it all around and smoosh the grains. Also to ensure that the rice doesn't become mushy, during the last several minutes of cooking, put a kitchen cloth over the pot or rice cooker you are cooking with to absorb the excess moisture in the rice. Hope this helps =]

  • and when washing the rice, wash it to the point where the water it is in is ALMOST clear. If it is clear, the rice will be too dry, if it is milky and opaque, the rice will be too wet and mushy and sticky.

  • Very interesting! A rice cooker is one utility I ought to get so I can make my own onigiri's (heard it works with a frying pan as well though). They look really delicious.

  • You don't have to eat the sea weed, it is only there to hold the Onigiri so the rice won't stick to your hands.

     3 types of rice- long-grained:american, not sticky, bad for onigiri medium-grained:korean/japanese­/chinese, so-so sticky, good for onigiri short-grained:korean/japanese/­chinese, very sticky, best for onigiri

  • That would be for sushi rice. Plain rice is for rice balls.

  • No . Use Japanese short grain rice. You can buy it at an asian food market or sometimes at your local supermarket. I think I used to buy a brand called Rose or something like that. You need to wash the rice three or four times before you cook it. 2:1 ratio water to rice.

    remember:

    two cups of water for every cup of rice (not the minute rice, though -- the uncooked raw rice)

    I usually do two cups of rice (with four cups of water) in a plastic bowl that's big enough so the foam doesn't boil over -- for 18 minutes on high (I know, that's a long time, but delicious things take a longer time to cook!)

    and then, tada! rice!

  • Japanese rice is more sticky than most other types of rice in the first place.. so I guess that helps to hold it together as well..

  • So sorry we haven't gotten back to you sooner. YouTube has not been sending us comments to our email. The comment above is correct in saying that Japanese rice is stickier. This is why it sticks well. Remember to wash the rice well though before cooking (no white). Vinegar is used only for su (vinegar) shi.
