yes he was defeated but ulquiora made him rest to fully recovered and gain more power! if u read manga where ichigo and ulqiorra fights you'll see him their! when ulquiorra died yammy makes his power increased and so he became from 10 to 0. read manga and you'll know it

That's because Yami is weak when he isn't released. That's the reason to why his number changes from 10-0. There isn't a real Espada named number 10. The weakest is 9 and the strongest is 0.

From what I thot when I saw Yammy's numbering rank change I was thinking that if you kill the stronger espadas before the wekeast the weakest will be then known as the strongest since there aren't any other espadas alive

Hard to say. Im hoping that they fight at some point. It would make sense that Urahara will be at least close to as powerful, but I think if he thought he was strong enough he would have dealt with Aizen himself, rather than trying to train Ichigo for it.
