  • I am totally confused, I think she is cooking everything at once. I cannt learnt that fast..I even panic when I have to name my document on my computer. One thing at a time would have been the ticket..What I got from this clip,, nothing, zero, nada, zilch.

  • you ain't gonna get much taste out of boneless skinless chicken don't be lazy use thighs and remove skin and bones believe me it ain't that much trouble i'm a guy and i even can do that

  • the best way to cook the tortillas is with no oil at all. the only time you should use oil is if you want hard shells. otherwise you end up with a lot of oil soaking in to the tortilla for no reason. get a heavy cast iron skillet and just warm them up dry.

  • Wow it looks exelent ... before you give the first taste to that succulent tortilla soup you should try a little lemon juice and tabasco sauce, those two combine will give you a taste of Mexico..

  • You weren't very clear on the chicken you added to the rice. Was it already cooked or raw?

  • The chicken is raw in the first stage of adding to the boiling pot of water. That step is to make the stock for the soup and for the chicken and rice.

    Are you cooking all three dishes or just one?

  • Just making the chicken and rice.

  • Boil the chicken in a pot of water first. Don't cook it all the way, about 80% and salt the water to flavor the stock. Once you brown the rice with the tomato & onion, add the chicken and ladle in some stock, 2 cups to start, then as needed until the rice is done. The chicken finishes cooking in the rice. Do not cover it, you want the stock to reduce away & do not stir the rice, that's what make it mushy. It should take about 15 - 20 minutes for the rice to cook on medium.

  • How long do you boil the chicken for?? you put the breast raw in the boiling water??

  • You boil the chicken for about 10 mintues, until it's almost completely cooked. Basically, we just want to make stock to add to our rice and to use as the base of our soup. And yes, you put the raw chicken into a pot of boiling water - that is how to make the stock. Thanks for your questions - please let us know if you have more.

  • Medium to medium low, depending on how "hot" your stove gets. Correct, we don't use lids, because we cooking this as a "reduction", you want to water to boil away - so your rice isn't too runny, sticky or mushy. Keep on cooking - and keep in touch:)

  • Thanks, I appreciate the information. My fiancé is a wonderful cook; he taught me how to cook but neither one of us can get our Spanish rice to come out good. We would even take turns trying. Different family members would tell us so many different ways of making it but, still it probably came out good once for him.

  • Anyhow, I showed him your video and he was very impressed and he's hard to impress because he is extremely picky when it comes to Mexican food. It's probably because his mother and grandmother made authentic from scratch Mexican food. I'm going to try your whole three coarse meal though and I'll let you know how it comes out. We actually always have all the ingredients you used in our fridge and I'm always looking for new recipes so thanks!

  • You start out with about 2 cups,enough to make sure the rice is covered. The trick is, you KEEP adding water until it's cooked. Also it's very important the water you add is HOT, we had our stock for the soup handy, but you can just keep a little pot of water pretty close to boiling that way you have plenty on hand to add to the rice as it cooks.   • After you cut up the chicken in the rice and moved it to the back burner did you leave it on low? You don't use a lid either?

  • How much water do you add to the rice? I saw you add two scoops of water from the stock. No matter how many times I try my rice never comes out. It always comes out hard. I would add two cups of water to one cup of rice. Also, do you brown the rice before you add the water?
