Amy basically saved Raphael's life by hiding him when he went on the run after mudering a nobleman. He adopted her as his daughter, and he wants her to be able to live happily and fit in. So when he became infected by Soul Edge and was filled with evil, and infected Amy when she was tending to his wounds, he decided if Amy couldn't fit in with the world, he would make the world fit with Amy. He's not so much a vampire as just...infected with a lot of evil.
