Why would you discard the pit? There's still lots of mango flesh on it, why would you waste it? I love eating around the seed, it used to be my favourite part as a kid.

In the interest of full disclosure, the full ingredient list was: oat meal (old fashion rolled oats with 2 tablespoons of flaxseed nuked for 1:45), chopped mango, chopped strawberries, a dash of ginger, a skosh of nutmeg, a crap-load of cinnamon, fake olive-oil butter and skim milk. You should give it a try.

You were cutting the mango on the wrong end. If you cut it from the stem, you get more meat out of it that way because the pit is shaped like the mango itself, it's fatter from the stem. Then you'll be able to follow the seed by feel, with the knife. You can also just peel the skin off like a banana, then just cut the meat out in thin slices. Put it in a bowl, you can use a fork to eat it.
Mangos are also good when they're not ripe yet. They'll be hard. Peel it like you'd do a potato. Cut in thin slices, add salt to taste. Yummy. It's sweet and a lil tangy.
Ray -- I'm with you right up until you turn the section inside out. What I do is cut and score as you demonstrated, then take a large spoon and scoop the pieces out. That way the juices mostly stay accumulated within the skin instead of dripping a mess all over the counter, and can then be poured into the bowl or sipped right out of the skin by the chef, like a prize. Enjoy!
I think you put too much emphasis on not picking fruits that have marks or blemishes. Sometimes, these factors in a fruit will lead to a better tasting experience;)
These tips are ideal types. You can still buy fruit with some blemish. If its blemished (ie soft spot)it means the fruit is really ripe. While most fruit will ripen after its picked it does not get any sweeter. It becomes juicier and that is what makes it seem like its changed in flavor. If that is what you like you should still buy fruit that is in best condition and allow it to ripen further at home. This allows you to save money by not having to throw out fruit you didn't eat in time. Thanks!

it's easier after you cut the chckerboard pattern, to use a spoon to get the fruit out and you don't have to turn it inside out this way.
