BTW - In demos/classes, even when I say the alcohol evaporates on cooking, I also make the point if anyone is an alcoholic or comes from a family with that problem it is probably still not safe for them to use alcohol in cooking. We have friends with that problem so I am well aware of the dangers. If someone chooses not to use alcohol, perhaps for religious reasons, then I also advise the students to use broth or fruit juices where possible.

I respectfully disagree. Your opinion is not scientifically based or correct. Food Detectives on the Food Network (aired 3/10/2009) proved that alcohol does not "evaporate away". In fact, MOST of it remains.

Thank you also for your comments on my show which was produced a number of years ago.
Interestingly, a quick Google search today of the Food Network site shows numerous recipes from top chefs stating that alcohol evaporates in cooking.
