That's the Shamisan you're hearing, a traditional Japanese instrument. I think it makes pretty good rock music if played like that, but you almost never hear it used in anything.

Since, it's a folk/traditional instrument it's in fact very unlikely to hear it in something else then traditional music.

You can hear it a lot in anime (Naruto, just to name one, in Jiraiya's theme) and in some videogames.

i would just replace big foot with Rendevouz of the Ghosts (EXpansion Kit) and the snes big blue with the arranged snes version or cover of big blue's theme (GX). too sad that there was no more place for port town (snes), like a snake and planet colors (port town and green plant- both gx) tracks :( all in all a good f-zero choice.
