There are various pads, and taking from the ones in General MIDI, it sounds like the Bowed or the Warm pads. If you can find a Whistle pad, that's great too.

I wish they cared about all their games like they do with Zelda, Metroid, and Mario.

Your wishing for the wrong people to make it. The epic Donkey Kong games (Country, Land, and 64) were made by Rare, a second party company. If you want an epic Donkey Kong game, then you want a Donkey Kong game made by Rare.
However, in 2002, Microsoft acquired Rare. Since Nintendo still owns the characters, Rare won't be able to make a new Donkey Kong game unless Nintendo reacquires Rare, or if Rare is allowed to make it for a portable Nintendo gaming system like the DS.
