Interesting demonstration. I wouldn't have tried it myself, but it's good see the capabilities of these boats tested in such a way and not just have the theorical notion of what would happen.
They don't have the cone ends because the tube has a tapered design, it gets bigger at the back. This allows for more buoyancy in the rear, more HP, and more interior space.

Always interesting to see such deflation demonstrations. Such boats are very safe. I wonder why the new Zodiacs don't have the cone ends anymore.
