As long as the relationship between them is static, the piece will sound correct no matter which scale it is played in, provided that the scale is major when it needs to be, and minor when it needs to be.

The difference between a C and D version of Canon is not in the way it sounds--if you played one and then the other, they would both sound correct. It is important to note that while notes change, the relationship betwen them is the same.

They refer to the scale in which the piece is played. Every musical instrument is capable of playing in some scale or another, even multiple scales. The piano is capable of rendering any scale. A scale always falls in the major or minor variety, with different modal scales being derived from these. Basically, these scales are characterized by certain patterns of note-inclusion. For instance, a C major scale is playing all the white keys between a C and the next highest C.

The C major scale, therefore, contains no black keys, which musicians refer to "accidentals", "sharps", or "flats". Now, were you to play a G major scale, there would be a diffferent set of included notes--G major has 7 white keys and one black key. This occurs because all major scales have the pattern of whole-step-whole-step-halfstep­-whole-whole-whole-half. If you apply this formula off of C, you get a scale with all white keys...from root key G, you get one black key.

@diaz1ify I agree, the "finger-spazzing" sounded awkward; it could have probably felt better if executed differently, with more fluidity and more lightness. I have dozens of versions of this piece, my all-time favorite, and the same effect was used, with better results, by George Winston's in his version (C major, I think). You might want to check it out if you haven't already listened to it.
